  • spring onion7.5 g

Instructions

  1. Main Slice chicken breasts into 1cm-wide strips, full length.
  2. Main Place chicken in a bowl with sake. Toss to coat.
  3. Main Set aside to marinate for 5-10 minutes.
  4. Main Grate ginger finely. Separate spring onion whites and greens.
  5. Main Mix ginger, spring onion whites, soy sauce, sesame oil, and minced garlic.
  6. Main Add water (about 2L) to a large saucepan and bring to the boil.
  7. Main Pour ginger-soy mixture into the boiling water. Reduce heat.
  8. Main Cook gently for 5 minutes without boiling.
  9. Main Add marinated chicken and sliced chillies to the broth.
  10. Main Turn heat to medium. Cook 5-6 min until chicken is cooked through.
  11. Main Beat eggs in a small bowl. Slowly drizzle into the broth while stirring.
  12. Main Add noodles to the broth. Cook 2-3 min until just tender.
  13. Main Turn off heat immediately once noodles are done.
  14. Main Add spring onion greens and stir through.
  15. Main Ladle soup evenly into 6 bowls.
  16. Main Top with toasted sesame seeds, fresh coriander, and seaweed flakes.
