Instructions

  1. Broth Boil a large pot of water; add beef bones and blanch 3 min. Tip: Blanching removes impurities for a cleaner broth.
  2. Broth Drain, rinse bones and pot well, then return bones to pot.
  3. Broth Add onion, smashed ginger, carrot, celery and water; bring to boil. Tip: Carrot and celery are optional but add sweetness.
  4. Broth Reduce to low, skim any scum, cover and simmer 2–2.5 hours.
  5. Broth Season broth lightly with salt; keep warm on low. Tip: Broth should be only slightly salty—beef juices will add more later.
  6. Braised Beef Melt rock sugar in a small saucepan over low heat. Tip: Watch carefully—sugar burns quickly after caramelising.
  7. Braised Beef Turn off heat as soon as sugar starts to caramelise.
  8. Braised Beef Immediately stir in doubanjiang, then add hot water and mix. Tip: Work quickly—the doubanjiang will sizzle in the hot caramel.
  9. Braised Beef Return to low heat, stir until sugar fully dissolves; set aside.
  10. Braised Beef Heat dutch oven over medium-high until very hot.
  11. Braised Beef Brown the beef on all sides in 2 batches; remove and set aside. Tip: Don't crowd the pan—work in batches for a good sear.
  12. Braised Beef Add ginger slices and scallion; stir-fry 1 minute until fragrant.
  13. Braised Beef Add caramel-doubanjiang paste, soy sauce, cooking wine, tomato paste, white pepper and spice packet.
  14. Braised Beef Stir everything together for 30 seconds, then return beef to pot.
  15. Braised Beef Add enough water to just cover the beef; bring to a boil.
  16. Braised Beef Reduce to a gentle simmer, cover and cook 3 hours, stirring every 30 min. Tip: Low and slow is the key to fall-apart tender beef.
  17. Braised Beef Remove spice packet; simmer uncovered another 30–40 min. Tip: Beef should be very tender—handle gently at this stage.
  18. Noodles & Assembly Boil a large pot of water for noodles and bok choy.
  19. Noodles & Assembly Blanch bok choy 1 min; remove and drain.
  20. Noodles & Assembly Cook noodles per package directions; drain well.
  21. Noodles & Assembly Toss drained noodles with a pinch of salt and sesame oil. Tip: Sesame oil prevents sticking and adds flavour.
  22. Noodles & Assembly Place noodles in bowls; ladle braised beef and juices over top.
  23. Noodles & Assembly Add broth to dilute the braising liquid to your preferred intensity. Tip: Equal parts braising liquid and broth is a good starting ratio.
  24. Noodles & Assembly Top with bok choy, scallion, cilantro and chili oil to taste.
